The First Harvest

Gardening is a big deal this time of year. It’s always fun to see what we can grow. It’s a time for experimenting. If a vegetable fails to grow, no big deal. If it works out, we’re excited to eat the bounty.

Our first harvest just arrived. The herb garden is flourishing. I mean, crazy big amounts of herbs. I harvested a lot of basil and decided to make pesto. I’m pretty proud of the result. We made a pizza with the pesto, a (store bought) heirloom tomato, and two yellow cherry tomatoes from our garden (!).

The pesto recipe was simple, and I look forward to trying more combinations:

2 c. basil, packed
1/3 c. pine nuts
1/3 c. shredded parmesan cheese
1/2 c. oil
salt and pepper to taste

Pulse the pine nuts and basil the food processor until it is shredded up and combined. Slowly add the oil while the food processor is turned on. Then add the cheese and pulse a few more times. Season with salt and pepper to taste. Note: If you make a lot and want to freeze it, don’t add the cheese until you thaw it and are ready to use it.
